A. K.’s GF Chocolate Chip Cakies (Cookies)
These are the moistest chocolate chip cookies you will ever eat.
- 1 cup soft butter
- 3/4 cup packed brown sugar
- 1/4 cup honey
- 1 package vanilla pudding prepared with 1 3/4 cups of milk
- 2 eggs
- 2 tsp vanilla
- 2 cups brown rice flour
- 1/4 cup potato starch
- 1 tbs xanthan gum (or guar gum)
- 1 tbs baking soda
- 1 tbs salt
- 1 bag of GF chocolate chips
Combine all the wet ingredients and blend until smooth. Add the dry ingredients and mix completely. Fold in the chocolate chips by hand.
Bake at 350 F for 8-10 minutes, until the cookies are golden brown. The trick is to make these cookies bite sized so they cook completely through without burning.
